Tinamit Honey, Guatemala - Crankhouse Coffee
Guatemala is unique as a coffee origin in profiling its coffee regions to show the diversity of the coffee it produces across the country. The majority of coffee from Guatemala that we’re lucky enough to try comes from the Huehuetenango and Fraijanes regions of the country so it’s exciting to try something completely different with this roast from Crankhouse.
Coffees from the region of Atitlán are influenced by the rich soils resulting from the three volcanoes that surround Lake Atitlán and the unique Xocomil winds that stir the lake and create a unique microclimate. Tinamit Tolimán is a relatively new cooperative of coffee growers founded in 2018 in San Lucas Tolimán, a town that sits on the shores of Lake Atitlán. The co-operative now has 26 members of predominantly Kaqchikel indigenous heritage who are as concerned with preserving the natural resources around the lake as they are with producing outstanding quality coffee.
This honey process lot is part of their expansion into non-washed coffee, which has helped to gain the support of exporters like Primavera. These coffee beans are packed with sweet nectarine flavour, orange acidity and rich red wine complexity that makes for an impactful filter brew.
