about

Bethania Javanica, Nicaragua

Bethania Javanica, Nicaragua - Yallah Coffee

Java is a long berry coffee varietal that was first planted in Central America by the influential Fincas Mierisch family in the early 2000s. On their farms, they developed an evolved version of Java, Javanica, with better cup quality, yield and disease resistance to suit the Nicaraguan climate.

The variety continues to thrive in Nicaragua, with Yallah sourcing this one from award-winning Finca Bethania in Nueva Segovia. The farm and the family’s on-site mill Cafetos de Segovia are managed by Martha Albir and her sister Ana, whose family are deeply intertwined with the Nicaraguan coffee industry and have pushed to transform its attitude to social responsibility, sustainability and quality.

This anaerobic natural is a classic example of the processing method; with boozy cherry liquor balanced by strawberry brightness and a smooth chocolate body.

Yallah Coffee are a small team roasting single-origin coffee out of a barn in Falmouth, Cornwall. Their roasting operation is backed by direct climate action: importing coffee by sail, eliminating single use packaging, committing to composting and powering the whole thing with renewable energy.

In 2024, they began their 1% for the planet membership, pledging to donate 1% of profits to environmental change.

Yallah partner with community charities both in Cornwall and at origin, sourcing with relationship and transparency at the forefront while also assisting rural Cornish communities to improve quality of life closer to home.
