The Salaverria family’s Finca San Francisco is a large 294 hectare farm in the Santa Ana volcano region of El Salvador. The estate has been split into separate “tablones”, which are processed individually to help maintain quality within the high volumes they produce while isolating different altitudes and growing conditions.

This washed lot comes from the El Pedregal block which sits at 1400MASL and was soaked for around 10 hours after pulping, which the Salaverrias feel gives the coffee beans an extra brightness. In the cup, this one has a classic sweet but delicate flavour profile with good intensity and some lovely peach acidity.

Two Words have roasted this one specifically for filter, with the overall nutty intensity providing a bold and sweet brew.
