It’s always exciting to see new processing methods coming from Indonesia, diversifying its coffee beyond the traditional Giling Basah method.

This anaerobic honey process lot roasted by Cult Coffee was produced by 200 smallholder farmers of Rancabali who contribute to Sadayana washing station. Sadayana is a washing station operated by coffee importer Sucafina and has been vital in connecting West Javan farmers with advanced processing, helping them to produce specialty coffee and receive the prices that this quality brings.

These West Javan coffee beans combine two Ateng varieties: Catimor species that are widely planted across Indonesia. These heirloom varieties thrive on the tropical, lower altitude Indonesian islands, where their hardiness is a real benefit. The coffee cherries are hand picked on farms between 0.5-1 hectare in size and are then taken to Sadayana where they are selectively sorted. The cherries appropriate for honey processing undergo anaerobic fermentation in barrels for 120 hours, then are dried on raised beds and then finally on patios for up to 12 days.

The final cup is sweet and juicy, with crisp white grape and pomegranate fruit flavour at the forefront, a smooth caramel body and some brilliant apple acidity. A deliciously balanced coffee that’s been specifically roasted for filter brewing.
