Clementine and brown sugar tasting notes provide a mellow and approachable cup for Cairngorm's ‘Nice’ festive coffee this year. As with their funkier counterpart Naughty, these coffee beans from Colombia have been sourced from Sebastian Ramirez’s award-winning farm El Placer in Quindio. 

There's a very thorough washed process behind this super clean cup. 90% ripe and 10% semi-ripe cherries pulped on the day of harvest ensure maximum freshness. The coffee is then fermented for  24 to 48 hours and then washed three(!) times to remove any remaining impurities. Drying takes a slow and controlled 15 days before the coffee can be packed in Grain-Pro bags and allowed to stabilise for 15 days before hulling, selection, grading and export. 

Sebastian undertook three years of coffee education to improve the quality of his product and now provides free consultancy to coffee producers to encourage them to produce the best coffee they can then buys their lots for above market rate. Nice by name and nice by nature.
