Santa Irene, Guatemala - Assembly Coffee

Toffee apple tasting notes in peak autumn? We’re in. These washed Catuaí coffee beans from Assembly bring a sticky body and juiciness that's perfect for an indulgent espresso or batch brew.

Santa Irene is a natural forest reserve covering 320 acres in Guatemala's Cobán region. Dr Jacinto Estrada Zanabria and her son Carlos have become renowned producers of rare and distinct Guatemalan coffees. A lot of this is the result of the unique rainforest climate in Cobán where there’s no dry season and rainfall can be almost double the amount of other coffee-growing regions.

Assembly Coffee’s origin story is a really interesting one. The roastery came about when a small team from Volcano Coffee Works, a well-regarded and established specialty coffee roastery based in South London sought to define how a roastery could best serve its purpose within the specialty coffee supply chain.

Assembly's vision became clear in 2015, founding a dynamic new roastery in Brixton that sourced only the highest quality specialty coffees and could adapt with the industry, prioritising customer needs by adopting a data-driven approach to coffee buying.

While we don’t roast our own coffee, we're a business that sources coffee with our customers at the forefront so this strategy really resonates with us!
