Las Lajas, Costa Rica - Baristocracy Coffee

Francisca Cubillo and Oscar Chacón are third generation Costa Rican coffee producers. The couple began processing their own coffee in 2005, joining the micro-mill revolution that transformed coffee in Costa Rica. Las Lajas covers 80 hectares in the Central Valley, where they process their coffee using both experimental and traditional methods.

After an earthquake in 2008, electricity and water was wiped out in the Alajuela region during the harvest and the family was unable to run their depulpers for honey process lots or produce washed coffees. They quickly built raised beds to produce natural lots which have become an important part of their story.

Thankfully they’re back producing their exceptional honey lots. This red honey one roasted by Baristocracy is clean and sweet, with characteristics of tart apple, syrupy sweetness, and crisp black tea on the finish.

Baristocracy is a family business bringing Australian speciality coffee expertise to the North East.

Australian born Alex was raised in the industry and, together with his Geordie partner Kate, has turned his background in roasting, blending and barista training into one of the North East’s favourite coffee roasters. Baristocracy roast and supply to numerous coffee shops around the region (including our LOCAL's coffee shelf) as well as producing beautifully complex bags for the aspiring home brewer.
