Baristocracy Mexico - Baristocracy Coffee

A really balanced washed Mexican coffee from North East roasters Baristocracy. As an espresso, the toffee sweetness and grapefruit acidity really comes through and as a filter brew that nutty almond flavour provides great depth- there’s a little bit of something for everyone.

Luis Ordonez farms in the very south of Chiapas, on Mexico’s border with the Guatemalan region of Huehuetenango. He has been farming his 26 hectare farm for 25 years and now works alongside his son Meynor to cultivate specialty coffee across more than a dozen varieties. Luis is motivated to open a centralised mill in Amatenango de la Frontera, hoping to help his neighbours avoid the exploitation of large buyers that he has experienced.

There are many infrastructural and economic challenges to accessing Mexican coffee so the majority we see come from co-operatives or producer groups. Individual lots like this one are a great opportunity for roasters to make a direct impact on farmers.

Australian born Alex was raised in the industry and, together with his Geordie partner Kate, has transformed his background in roasting, blending and barista training into one of the North East’s favourite coffee roasters. Roasting only speciality grade beans, they supply to numerous coffee shops around the region (including our LOCAL's coffee shelf) as well as producing beautifully complex bags for the aspiring home brewer.
