Luz Ángela Rojas is a talented young coffee producer from Colombia. Raised in a coffee-growing family, she went against the advice of her family and left her career in healthcare to return to her coffee roots.

The project on her family farm Finca Chorro Alto is all about producing quality coffee full of variety through skilled agronomy rather than focusing on the complex, experimental and often materially intensive processing that gets a lot of hype in the specialty coffee world. ALL CAPS are massive fans of the juicy natural coffees Ángela produces as perfect examples of how a minimalistic processing approach can bring out the pure, natural sweetness of the coffee fruit.

This 100% Red Bourbon lot has big ripe strawberry flavour with a creamy white chocolate body and some slight sherry booziness courtesy of some masterful processing. Coffee cherries were floated to remove underripe and defective fruit. The cherries were then oxidised in drums for 36 hours, fermented in water for a further 40 hours, then dried for 72 hours in a controlled environment.

This one’s going to be on guest espresso at our coffee shop LOCAL for the next month. The aim was to find an espresso coffee that would be exciting without milk and work well in milk-based drinks and we think this Colombian coffee does all that and more!
