Halfway Home Half Caff - Coborn Coffee
Truth be told we’re still not quite sure what we think about the Half Caff craze, but when half the team have made it their New Year’s resolution to cut down on their caffeine, every little helps- especially when it’s as tasty as this Mexican coffee from Coborn. Juicy red fruit, tart lemon meringue with lots of creamy sweetness.
The decaffeinated portion comes from 24 communities in Frailesca, Chiapas. Each producer farms only around a hectare of land, so their coffee is combined into community lots like this one to increase its value.
The Mountain Water process used to decaffeinate this lot was developed and carried out by Descamex in nearby Veracruz. Extremely pure spring water from Mexico’s tallest volcano Pico de Orizaba is used to gently extract caffeine from green caffeine beans. The caffeine and coffee solids dissolve in the water which is passed through charcoal filters leaving the flavour compounds in the bean.
The caffeinated half of this coffee is a fully washed coffee from Oaxaca, another Mexican coffee growing region.
London based micro-roastery Coborn Coffee have a loyal following of supporters who have the same respect for both their high quality coffee and responsible sourcing and roasting. Justin and Kenny founded Coborn with the aim of making unique and great tasting coffees affordable to their local communities. In the two years since their inception, they’ve managed all of this while sourcing only from female majority owned farms and co-ops in developing economies.
We got chatting to these guys at London Coffee Festival and couldn’t get enough of their fun-filled brews or ambitious ideas for the coffee industry so we’re thrilled to have them on drop.
