Pink Honey, Vietnam - Blue Hour Coffee
A new roaster on the roster and our very first Vietnamese coffee to boot! Blue Hour Coffee have sourced this one from Zanya Cooperation, a specialty coffee producer hoping to disrupt the expectations of Arabica coffee from Vietnam.
Zanya is run by Krajăn Lim, a farmer from the K’ho ethnic group, and Marián Takáč in Langbiang Mountain Plateau of Lam Dong province. Zanya works closely with around 30 smallholder farmers from the K’ho community to produce high quality coffee that combines tradition and innovation and adds real market value to their product.
Their Pink Honey anaerobic process involves 80 hours of anaerobic fermentation before the cherries are depulped- leaving some mucilage on the seed. As the coffee dries, the actively fermenting mucilage brings both a sweet and bright flavour profile and gives the parchment the pink colour that gives this lot its name.
A great option for filter brewing, Blue Hour have given us their fave pourover recipe to try out for this one.: 17g, 275g water, 2:50 brew time - 50g bloom for 30secs, then add 75g water up to 1min 10secs, followed by 50g every 30s.
