Edelweiss Estate, Tanzania - Assembly Coffee

Edelweiss is a third-generation estate managed by siblings Neel and Kavita Vohora on the edge of Tanzania’s Ngongoro Conservation Area. Their coffees are known for their complex and vibrant flavour profiles, which owe a lot to the estate’s work in preserving the ecosystem that surrounds them.

This Tanzanian coffee uses the N39 varietal- a disease-resistant, high yielding Bourbon variation developed in the 1930s by Tanzania’s coffee research institute and still widely planted today.  In the cup, this natural process lot has a pronounced sweetness with notes of pineapple and offers a thick, mouth coating finish that Assembly recommend for pourover and Aeropress brewing.

Assembly Coffee’s origin story is a really interesting one. The roastery came about when a small team from Volcano Coffee Works, a well-regarded and established specialty coffee roastery based in South London sought to define how a roastery could best serve its purpose within the specialty coffee supply chain.

Assembly's vision became clear in 2015, founding a dynamic new roastery in Brixton that sourced only the highest quality specialty coffees and could adapt with the industry, prioritising customer needs by adopting a data-driven approach to coffee buying.

While we don’t roast our own coffee, we're a business that sources coffee with our customers at the forefront so this strategy really resonates with us!
