Mas de la Sabatera’s Pinot Noir Pet Nat is all about celebrating the drama of natural winemaking, because there's no harvest without drama.
From weather to fermentation it’s an unpredictable world, and with minimal intervention involved there’s no slowing it down! As we know all too well ourselves, it's these dramas make the final product so much more of a celebration.
This 100% Spanish Pinot Noir Pet Nat is a truly joyous sparkling wine that we’ve already christened our wine of the summer. It’s fresh, fun and fizzy with bags of Catalan identity. A palate of sour cherry and violet that’s similar to the estate’s still Pinot Noir, but with some gentle bubbles to carry it.
"If you like wine so much why don't we start making it ourselves?" Those words from Edu Pallarés's father Xavi inspired them to set up Mas de la Sabatera with a vision to 'rescue' plots around Montblanc in which they saw great potential, and nurture the health of the soil.
Mas de la Sabatera is based in a formerly abandoned farmhouse, Mas d'en Sabater, where day labourers and farm hands had lived for centuries. Now, the farmhouse is used to make zero-zero wines using characterful grapes like Trepat, Pinot Noir and Chardonnay in the heart of Conca de Barberà.
