Triple Co’s latest Costa Rican comes from the Monge Garcia family farm Las Palomas, which takes its name from the many birds who share the 6 hectare site. Las Palomas is located in the high altitude district of Tarbaca, where the environment is lush, green and minimally populated.

Daniel José and María Isabel inherited the farm when their father Don Jorge passed during the pandemic and have carried on his legacy of superior quality coffee.

This natural lot is sweet with brown sugar and ripe cherry flavour, and a luxuriously chocolatey body. Coffee cherry was delivered to the mill and processed immediately. After initial sorting for defects, the cherry was left to dry for seven days, during which time it was regularly turned and sorted as the drying progressed.
