Kimaratia, Kenya - Ritual Coffee
These coffee beans from Cheltenham coffee roaster Ritual pack a big punch of classic Kenyan coffee flavour: deep and syrupy blackcurrant body with cranberry sharpness and a clean Assam tea finish.
This lot underwent washed processing at the Gichuka Coffee Factory, one of three wet mills operated by Kimaratia Farmers Cooperative Society. Around 2200 farmers deliver coffee cherry to these stations, all of which are dedicated to producing vibrantly expressive coffees that truly showcase the local terroir.
Once farmers have delivered coffee to their nearest mill, it is pulped to remove all fruit from the seed and soaked overnight (fully washed) in cement tanks to really clean the mucilage off the seed, giving extra clarity to the final cup. The coffee is cleaned once more in water channels then laid out on raised beds to dry in the sun.
Ritual Coffee are a Cheltenham specialty coffee roastery and brew bar in the heart of the Cotswolds. Courtney and Callum founded Ritual in 2019 on a basis of openness and honesty- with transparent sourcing at the very heart of all the coffees they roast.
Their coffee offering centres around relationships that Ritual return to year on year, always prioritising the work of smaller producers and farming co-operatives. All of Ritual’s coffee is roasted in their beloved 1980s roaster Sammy, with the hope of taking roasting back to its purest craft by roasting manually for full quality control.
