This bright and funky Colombian specialty coffee roasted by Ritual has the sweet flavour of peach rings, a tannic assam tea-like body and blood orange acidity.

This one comes courtesy of Pedro Echavarria of Pergamino coffee- a major player in the Colombian specialty coffee scene- where they operate cafés, assist smallholders and grow their own coffee. Finca Agualinda is part of Pergomino’s own Santa Barbara estate in Antioquia.

These coffee beans have undergone extended fermentation - a process necessitated by the small lots and lower temperatures at the extreme altitudes of this region, where lots rarely make up a full fermentation tank and longer time is taken to break down the mucilage. After pulping, 3-5 days worth of hand-harvested cherries are fermented underwater for 24 hours, before a second lot is added on top to ferment for another day. The introduction of the second lot raises the PH in the tank allowing for fruit forward flavours while avoiding any vinegary over-fermentation taste. The process is finished with double washing and sun-drying.
