From the misty mountains of central Chiapas comes this beautifully balanced Mexican coffee. Cajpe Lak means ‘coffee flower’ in Tzeltal, the language spoken by the smallholder indigenous Tzeltal families who’ve cultivated this lot in Tenejapa. Coffee growing in this region is all about ancestral knowledge and guidance, patience with the land and harmony with the environment in which they've lived for millennia.

All of the coffee that they grow is organic, washed and processed by the grower families using traditional techniques that are guided by the senses. The ripe cherries are hand picked before sunrise,  then depulped and fermented in small tanks or buckets for 24 to 36 hours. The coffee is then washed and laid to dry across rooftops, on nylon mesh canopies or on wooden racks.
