A bright and clean Tanzanian coffee from Hundred House with notes of greengage, white tea and nori. What’s a greengage you ask? It’s a small, intensely sweet but pleasantly tart plum that’s considered one of the finest fruits. Sounds like a delicious Chemex to us. 

When Ishando AMCOS was founded in 2018, it only accepted home-processed coffee from its 25 members, meaning there was a large variance in quality. Tanzania now has one of the world’s fastest growing coffee markets, which has meant that Ishando was able to establish a Central Processing Unit two years ago. Here they are able to process and de-pulp fully washed parchment coffee to much higher quality and consistency standards.

Coffee is handpicked in the morning and delivered to the station in the afternoon. From here the cherries enter fermentation channels where they undergo a 24 hour dry fermentation. The coffee is then thoroughly washed and soaked for 12 hours. Water used in this processing is sourced from the River Dogo, located just 100 meters from the mill.
