Shyira, Rwanda - Exemplar
Exemplar are dropping back in with this exceptionally silky and sweet coffee from Rwanda. Shyira Washing Station in Nyabihu is operated by Muraho Trading Company who have nicknamed the station ‘little baby.’
Shyira receives cherries from farms as high as 2300 MASL, and processes them mostly as traditional washed lots like this one. Here, the cherry is hand sorted and pulped before undergoing 12 hours of fermentation in concrete tanks and agitation with ceremonial foot-stomping to remove any residual mucilage before being washed, sorted again and dried. Fruity but versatile, these coffee beans offer bright raspberry and candied lemon notes balanced by a creamy body.
The Nyabihu region experienced devastating landslides in 2020, so support from coffee importers like Raw Material has had a large and immediate social impact for the whole community. The support of the coffee community has maximised how far their investment goes; providing aid, rebuilding homes and replanting trees.
Exemplar is a Belfast based roasting and research project with a keen eye for what is groundbreaking and important in the specialty coffee industry. Founder Phil collaborates with industry experts, academics and baristas on quarterly magazines and carefully selects and roasts coffees that correspond to each issues’s focus. Together, they give an insight into where coffee is right now from a well-rounded perspective.
Previous issues have focused on industry trends like varietals, processing and altitude and spotlighted countries like Brazil and India that speak to the constantly expanding world of coffee. We’re super excited to have contributed to Exemplar’s latest magazine that shines a light on blends!
