El Salvador Finca San Francisco, Jose Omar Lemus - Dark Woods
This new coffee from El Salvador, roasted by Dark Woods, makes use of the small Central American nation’s system of micro-lots. This small farming method lets farmers get the most of their smaller parcels of land, and offers great quality control and transparency. These particular coffee beans, 100% naturally processed Pacas, come from Jose Omar Lemus’s 2 hectare Finca San Francisco, which is part of the Chalatenango micro-lot programme. Picked ripe and dried on African beds, this cup is full of jammy and winey fruit flavour, but keeps a very soft and delicate texture that’s versatile however you brew.
