El Salvador La Guachaca - Bailies Coffee Roasters
Café Pacas have spearheaded specialty coffee farming in El Salvador, with their family enterprise owning or collaborating with around 20 farms in the country.
As a result of the land redistribution of coffee estates in El Salvador, there is a restriction on the size of coffee farms owned by one entity, so small farms have benefitted from the support of farm groups like Café Pacas and Pacas equally benefit from collaboration with smallholders.
This naturally processed lot, directly traded by Northern Irish roasters Bailies, comes from La Guachoca in the volcanic Cerro Verde region, who have worked with Café Pacas since 2008. These coffee beans are rounded, smooth and versatile, offering super balanced flavour with tasting notes of dark chocolate, dried mango & hazelnut.
Founded by Russell Bailie in 2001 with a vision of championing specialty coffee in Northern Ireland, Bailies Coffee Roasters have been roasting, training, and award-winning in Belfast for almost 25 years and are a real cornerstone of the specialty coffee industry in the country.
While many of our coffee suppliers are fresh industry faces making big waves in today’s specialty coffee boom, sometimes you just can’t beat that level of experience. Having built a quarter of a century of partnerships and relationships with some of the world’s best coffee farms, producers and communities, Bailies have it in spades.
