This new Brazilian coffee from ALL CAPS shines a big syrupy light on the Topazio varietal with a cup that has brown sugar flavour and a lasting blackberry finish.

Topazio is a hybrid of the Red Catuai and Mundo Novo varieties developed by Brazil's agricultural sector in the 1960s for its high yields and uniform ripening. The dark yellow cherries that the Topazio variety fruits are renowned for producing a distinctly sweet final cup with tropical fruitiness. The combination of cup quality and high yields makes it ideal for cultivating on large farms like Rio Brilhante in Cerrado Mineiro. Inacio Carlos Urban planted his first coffee trees on Rio Brilhante in 1984, with an eye for sustainability and innovative farming from the very start. An enormous 1600 hectares of the 2000+ hectare farm is dedicated to specialty coffee, where a programme of regenerative agriculture is overseen by Inacio and his sons and made possible by 250 local workers.

A natural process featuring 48 hours of aerobic fermentation further brings out that trademark Topazio sweetness, which ALL CAPS recommend brewing up as a creamy espresso, but we think it would make a delicious Aeropress coffee too.
