This balanced brew comes from a very special female coffee co-operative In Colombia’s Huila region. Las Gaviotas is an organisation producing coffees inspired by the tradition, skill and community of Colombian coffee culture. Las Gaviotas, ‘The Seagulls’, gets its name from the traditional white outfits that the coffee-picking Chapoleras wear while on the coffee farms- from above, the women resemble a flock of seagulls.

The 40 contributing women each own a farm of less than 5 hectares so the co-operative, led by Ana Gloria Rodriguez, is essential to allow them to produce quality coffee beans like these.

This washed coffee has undergone 12 hours of fermentation and spent 15 days drying under the sun until it reached ideal moisture levels. Roasted by ALL CAPS, the final cup is clean and sweet, with a rich chocolatey body and orange acidity that makes it perfect for pairing with milk or drinking black.
