Kicking off our coffee from new roaster All Caps is a really special natural Colombian Geisha coffee from the Caldas region. Hermel Alvarez operates as part of a cooperative for local growers in the town of Anserma, who all have a desire for better quality and a more fair share of their profits.

On his 15 hectare farm, 15% of which is Geisha, Hermel hand picks the coffee cherries to remove defects and then entrusts his coffee to the Co-op’s wet-milling site for processing.

Here, the cherries are divided by maturity, with the most ripe cherries selected for natural processing.

Geisha is one of the most highly valued coffee varieties in the world, growing a big reputation in the specialty community. These naturally processed coffee beans have all the full bodied fruit flavour and heady aroma that have won this variety so many fans, with flavours of fruit salad and sweet tamarind that lingers on the palate.
