A brilliantly bubbly organic Cava from Dominio de La Vega, located near Valencia in Spain's Requena region. This 2023 vintage is 100% Macabeo, farmed on the low lying, fertile plains of Magro River. The grapes grown here produce a fresh and light style of Cava that is perfectly suited for the citrus and orchard fruit aromas of the Macabeo. This dry, high acidity sparkling wine has a unique balance of freshness and biscuity maturity that owes a lot to Dominio de la Vega’s careful natural wine making style.

During first fermentation, the wine undergoes 60 days of daily stirring of the yeasts (battonage) to give lots of aromatic complexity. The liqueur de tirage is added to the base wine, initiating the second fermentation in the bottle to create those creamy, moussey bubbles. The bottle is stirred after 6 months to put the lees in suspension before a further 12 months of bottle aging to bring lots of extra complexity and integrate the palate.
