His scientific approach to coffee growing and processing backed by his experience as a chemical engineer has seen him develop extraordinary cups that offer multi-sensory experiences.

Señor Benitez has 3 diverse coffee farms and a processing centre across Piendamó in Colombia’s Cauca region, where he grows over 26 varieties and meticulously controls every step from tiny seedling to export-ready coffee bean, all the while researching more cutting-edge techniques to transform the world of specialty coffee.

This Castillo lot from Finca Paraiso-92, roasted in Glasgow by ZENNOR, underwent Benitez’s high-intervention “advanced washed” process that includes UV sterilisation, selective yeast fermentation, and temperature impact fermentation to produce a very sweet and very juicy coffee with full-bodied tropical fruit flavour. Pure joy.
