Villa Pastora, Colombia - Ritual Coffee
Yulieth Mora is a name we’re seeing all over our roasters’ offer lists and it’s no coincidence. This third-generation Colombian coffee producer farms alongside her brother Gerson and father Alvaro on their farm Villa Pastora in Palestina.
The family has been experimenting with varieties including Gesha and Ombligon as well as with post-harvest processing to produce some exceptional microlots, all while sharing their knowledge and experience with neighbouring farmers.
This one from Cheltenham coffee roaster Ritual is a vibrant washed Pink Bourbon that opens with bright citrus flavour and leaves a lingering sweetness on the palate.
Ritual Coffee are a Cheltenham specialty coffee roastery and brew bar in the heart of the Cotswolds. Courtney and Callum founded Ritual in 2019 on a basis of openness and honesty- with transparent sourcing at the very heart of all the coffees they roast.
Their coffee offering centres around relationships that Ritual return to year on year, always prioritising the work of smaller producers and farming co-operatives. All of Ritual’s coffee is roasted in their beloved 1980s roaster Sammy, with the hope of taking roasting back to its purest craft by roasting manually for full quality control.
