Mamak Shuar, Ecuador - Ritual Coffee

Ritual have served up a really special coffee from Ecuador, bright and sweet with jammy peach and soft elderflower floral flavour.

Ecuador’s Shuar community is the country’s second largest indigenous community, living in territories between the Andes and Amazon. The coffee they grow is representative of the Shuar connection between land and life, free from chemicals and cultivated with the utmost care. The word ‘Mamak’ means mother and honours the fertile soils nature has given them.

This washed process lot was picked on small farms in Chinchipe at the very Southern tip of Ecuador at altitudes of up to 1300MASL. After sorting and pulping, it has undergone a 36 hour fermentation period before triple washing and drying for up to 25 days to make a fruity but clean cup.

Ritual Coffee are a Cheltenham specialty coffee roastery and brew bar in the heart of the Cotswolds. Courtney and Callum founded Ritual in 2019 on a basis of openness and honesty- with transparent sourcing at the very heart of all the coffees they roast.

Their coffee offering centres around relationships that Ritual return to year on year, always prioritising the work of smaller producers and farming co-operatives. All of Ritual’s coffee is roasted in their beloved 1980s roaster Sammy, with the hope of taking roasting back to its purest craft by roasting manually for full quality control.
