Hacienda Santa Luz, Nicaragua - Ritual Coffee
A really expressive Nicaraguan coffee, perfect for a fruity filter. Ritual’s latest roast has been sourced from Hacienda Santa Luz in Nicaragua’s Matagalpa department.
Matagalpa is a lower elevation region, but the unique microclimate between 700-900MASL adds lots of complexity to the cup and the warm, flat land between the mountains is ideal for drying coffee.
Hacienda Santa Luz had previously been abandoned, but was restored with a vision of sustainability and quality by managers Ricardo Herrera and Marco Tulio Gonzalez. All operations, from cultivation to export, take place on the farm; a vertically integrated model that ensures tight quality control and the ability to experiment with their product.
This lot has been processed using a yeast inoculation method, where specially selected yeast cultures were introduced during fermentation to help guide flavour development. In this cup its brought out sweet and juicy pineapple, alongside blood orange acidity and a delicate Darjeeling tea finish.
Ritual Coffee are a Cheltenham specialty coffee roastery and brew bar in the heart of the Cotswolds. Courtney and Callum founded Ritual in 2019 on a basis of openness and honesty- with transparent sourcing at the very heart of all the coffees they roast.
Their coffee offering centres around relationships that Ritual return to year on year, always prioritising the work of smaller producers and farming co-operatives. All of Ritual’s coffee is roasted in their beloved 1980s roaster Sammy, with the hope of taking roasting back to its purest craft by roasting manually for full quality control.
