PLOT Roasting’s house espresso is a 100% peaberry lot from Brazilian coffee estate Fazenda Mió. This natural mutation means the coffee cherry develops only one small seed instead of two. For some, these little beans prove a challenge when processing and roasting but for forward-thinking Fazenda Mió they’re well worth the extra effort for the concentrated flavours they bring. Mió, which covers almost 1600 hectares in Brazil’s Monte Santo de Minas, has processed this lot using the traditional Brazilian pulped-natural method.

This processing technique is very similar to honey processing but involves a light, uniform layer of mucilage on the seed and quicker drying without fermentation, aiming for nutty, balanced flavours rather than the syrupy fruit notes of honey processed coffees.
