Luis Padilla, Costa Rica - PLOT Roasting

Luis Padilla’s family had owned several coffee farms around Costa Rica before building their own project at La Isla in Naranjo. The sustainable farm has become a real laboratory for Luis to put into practice his agronomical studies, focusing on regenerating the land by growing exotic varieties and modern hybrids that he hopes will future-proof their harvest. This lot is 100% Catiguá, a hybrid between the Catuai and Timor Hybrid varieties developed by Brazilian researchers to be resistant to leaf rust and nematodes.

Alongside 10.5 hectares of fertile land, the site has an eco-friendly pulping machine, a purpose built wet mill, and a de-mucilager that makes it possible to efficiently produce different types of honey process coffees. This yellow honey lot has less than 25% mucilage left on and is left to dry for around 10 days.

These coffee beans, roasted by PLOT, provide lots of sweetness with dried fruit and bright nectarine flavour and a soft biscuity body.

PLOT Roasting are a small team of experienced coffee professionals who back up their transparent, ethical sourcing with precision roasting.

Since stepping away from behind the counter, they’ve put all of their knowledge into building a state of the art roastery in South London. Their Woolwich facility features a temperature green coffee storage room, efficient and environmentally friendly Loring roasters, and a colour sorter to identify defective beans.
