A real stunner from Chinese coffee innovators No Stone Estate, a worthy addition to Harmony’s Out of the Ordinary range. These highly aromatic coffee beans are giving us flavours of ginger, lemongrass and bergamot with a pleasant sweet aftertaste. No Stone was founded in 2023 by Lu Sun and has already made a huge impact, sourcing beans for their superior quality from around China’s main coffee region Yunnan, and offering technical guidance to farmers to develop the Chinese coffee supply chain from the ground up.

Once the cherry has arrived at No Stone’s processing facility the real magic begins, with state of the art quality control at every stage from hulling to drying.

Honey processed doesn’t quite do this one justice, with this lot undergoing 150 hour anaerobic enzymatic honey processing. For this method coffee cherries are selectively paired with specific enzymes to catalyse the fermentation process and break down the mucilage on the coffee cherry under anaerobic conditions for 150 hours.

Here, a flavourless enzyme was extracted from the ‘Buddha’s Hand’ citrus fruit, which gives a delicate floral aroma to the final coffee.
