We’ve got the processing team at Bette Buna to thank for this one as it's their innovative kickstart process that is providing this extra juicy and sweet cup.

This lot comes from Bette Buna founders Dawit and Hester’s own farm Megadu. Bette Buna (House of Coffee) began their operations in the Sidama village of Taferi Kela, expanding both the site and legacy of Dawit’s grandfather’s farm. 5 years ago, they brought the community model that they had built in Sidama to Megadu in the Guji zone.

Their kickstart natural process involves briefly placing coffee cherries in an anaerobic environment- not enough time to begin fermenting but long enough to change the chemical structure of the cherries and concentrate their sugars. After receiving this kick, the cherries resume traditional natural processing with a whole bunch more complexity and sweetness.
