A juicy smoothie of a coffee from a new roaster on the drop roster, Assembly Coffee. We’re kicking things off with a very special Colombian coffee from Cata Reserva, which sits around 2000MASL near La Florida, Huila.

The farm was previously owned by Rodrigo Cortés, who worked closely with Colombian exporter Cata. With his retirement, Cata jumped at the chance to bring his incredible plot and its unique terroir under their umbrella and continue his legacy.

Their work on Cata Reserva is focused around a sustainable, microbiology driven approach to small lots. For this Castillo lot, the ripe cherries underwent 3 days of open-tank oxidation, then a 4-day sealed fermentations-with coffee mosto from previous fermentation and panela before being semi washed. These controlled fermentations produce juicy strawberry and mango fruit tasting notes without that unwanted boozy flavour.
