Big time tropical juice flavour from this vibrant Colombian coffee, roasted in Cheshire by ALL CAPS. Jorge Mira balances sustainability and innovation at El Jaragual in Antioquia, putting his background in forestry engineering to good use.

This experimental lot has undergone multistage precision processing that both intensifies and balances the bold fruit notes and sweetness in this cup. Ripe coffee cherries are first meticulously sorted before being placed in plastic drums for their first oxidation. The cherries are then pulped to remove the cherry then oxidised once again to break down the mucilage before being washed at 45 degrees to initiate thermal shock.

Jorge then incorporates an extended fermentation of 96 hours with specially selected yeasts to enhance complexity- a process finished with a final 5 degree cold wash to lock in the flavour.
