La Primavera Colombia - 17 Grams
We love a new emerging origin, but there’s exciting stuff coming from the big players in the coffee world too. This semi-washed Colombian coffee roasted by drop newbies 17 Grams has bright and complex fruity flavours, expertly balancing sweetness and acidity.
Freddy Correa’s La Primavera farm in Baja Encanto, Huila, is constantly experimenting with new processes and varieties. This Pink Bourbon lot gets its powerful fruit flavours of Lychee, lemon and raspberry from 24-hour pre-fermentation period, before a 36-hour aerobic fermentation.
17 Grams have roasted this one with an omni profile so it can handle espresso brewing, but we’re loving those fruit salad vibes with hand brewing methods.
In 2022, they decided to build all that experience into roasting, nabbing a modded-up refurbished roaster from our friends at Crankhouse to set up at a new roastery location.
Since then they’ve been roasting up a storm, focusing on vibrant coffees and perfecting their espresso, filter and omni roast profiles.
