Dompter La Bête (Tame the Beast) combines Merlot and Cabernet Franc from the high vineyards of Donzac for a bright and juicy red wine that’s every bit as fun as the illustration on the bottle representing the estate’s long-time gardener. Fermentation takes place with wild yeasts in temperature controlled conditions with no further pressing to reduce tannic structure. Before bottling, the wine has 8 months aging in stainless steel with no fining or filtration and limited sulphite use.
