Bodega Robles Piedra Luenga PX - Bodegas Robles
Bodega Robles’s organic Pedro Ximenez Dulce is the perfect match for rich desserts from cheeseboards to chocolate tarts- ideal for the fast-approaching festive season. Bright amber in colour, this sherry-style bottle features signature illustrations from Cordoba artist Miguel Galadi.
In the hot summers of Montilla-Moriles, the Pedro Ximenez ripens easily, allowing them to reach 15% alcohol without fortification, meaning the wines are fruitier with a less overwhelming flavour profile.
The PX is left to ripen, and fermentation with natural yeasts lets the wine reach the necessary 15% for the development of flor. The wines are then aged in old 500L American oak butts with the Dulce dried on Pasero mats and pressed twice.
The nose offers ripe fig and fudge and the palette is packed with dried figs and rains, sweet caramel and burnt nuts with a little citrus at the finish.
Certified organic winery Bodegas Robles has been producing sherry since 1927 in DO Montilla-Morieles near Cordoba in Southern Spain.
This area of Andalusia is characterised by sandy limestone soils and long, dry summers that are perfect for ripening Pedro Ximenez for both dry and sweet wines.
The estate has worked organically since 1999 when the family’s third generation Francisco and Pilar began a series of agro-environmental projects to improve soil quality and increase biodiversity.
