Pedro Moreno, Honduras - PLOT Roasting

87 year old Honduran coffee producer Pedro Moreno was one of the first farmers to grow coffee in the region of Santa Barbara. Having started with less than a hectare of coffee in 1983, Don Pedro’s product is now some of the most sought after coffee from Honduras, creating exceptional specialty micro-lots with the help of the Beneficio San Vicente mill and passing on his knowledge to his children and grandchildren.

This washed lot roasted by PLOT makes use of the Kenyan varietal SL28 with much of the same bright berry flavour and citrus punch you’d expect, and has been very simply processed to leave this intrinsic varietal character in the final cup. Hand picked coffee cherries are first depulped and dry-fermented in tanks for up to 18 hours. This parchment coffee is then thoroughly rinsed 4 times before drying for an ultra clean cup that's ideal for filter brewing.

Since stepping away from behind the counter, they’ve put all of their knowledge into building a state of the art roastery in South London. Their Woolwich facility features a temperature green coffee storage room, efficient and environmentally friendly Loring roasters, and a colour sorter to identify defective beans.
