Selva Norte, Peru - Parallel Coffee
Parallel Coffee’s new roast comes from the mountainous landscape of Peru’s northern highlands. Cafe Selva Norte is part of the Urapi Fund’s environmental initiative and works with coffee growing communities and cooperatives across Cajamarca, Amazonas and San Martin to support and represent farmers in the supply chain while also fighting land degradation.
Each lot is selectively harvested then processed and combined at Café Selva Norte’s state of the art milling facility to create cohesive and balanced community blends. This washed process coffee was pulped within 24 hours of harvest then fermented in tanks with water for 12 to 48 hours to naturally break down the mucilage. The coffee was then washed thoroughly with fresh water to remove any residue and dried on raised beds.
Throughout the whole process, Cafe Selva Norte’s aim is to create great tasting Peruvian coffee from the origin’s most represented varieties to show off the incredible quality of coffee from this region and build a resilient industry. This one gives us classic Peru flavour, with brown sugar sweetness, milk chocolate body and a welcome hint of citrus acidity.
Scottish coffee roasters Parallel are the new kids on the block. Founders Adam, Danny and Colin have a heap of collective experience in the coffee industry and they've now decided to channel their passion into a roastery that's all about seasonality and careful, light roasting to show off the natural characteristics of each lot.
The Parallel team source small quantities of exceptional quality coffee that changes frequently with the seasons- so their coffee might not hang about but there's always something fresh brewing!
The name Parallel comes from the parallel lines that sit at 23.5 degrees either side of the equator that form the coffee belt and the importance of provenance and terror to the supply chain.
