A truly unique coffee from a truly unique region. These Guatemalan coffee beans have been sourced from Ayarza, where a catastrophic dual volcanic eruption took place around 20,000 years ago. The caldera this event formed has created a dramatic landscape dominated by the blue waters of Laguna de Ayarza and very handily for us has also made the perfect environment for growing high quality coffee.

Over 1000 producers bring their coffee to the Ayarza Cherry Mill, but only high grown coffees harvested in the late winter earn the Blue Ayarza label.

This lot has been anaerobically fermented for 120 hours and naturally processed, using cherries carefully selected to meet the mill’s exacting ripeness standards. The resulting cup is packed with tropical flavour and juicy lime acidity.
