Clever Delgado’s farm La Huaca sits 1900 MASL in Peru, a region quickly becoming renowned for its specialty coffee production. It’s taken a rigorous pruning and picking schedule but Clever has significantly improved the quality of his coffee, enforcing strict ripeness standards during harvest.

Like most Peruvian coffee producers, Clever processes his own coffee on site using traditional methods. He’s been supported with technical guidance by exporters to help advance his processing, and now uses an extended 72 hour fermentation period before multiple washings to get the very best flavour from the coffee cherries. The resulting cup is full of biscuity sweetness with some gentle juicy raspberry acidity bringing balance to this super smooth and versatile cup.

Odd Kin have roasted this one for espresso, but it makes a great easy drinking filter coffee too.
