These Colombian coffee beans roasted by Fika in Durham are sweet and seriously drinkable but still manage to pack in plenty of fruity complexity. White chocolate body is backed up by sugarcane sweetness, with stone fruit and lime acidity making this one a really versatile cup.

Luz Helena Salazar’s family have positioned themselves as leaders of the specialty coffee industry in Colombia. She has honed her craft alongside her husband Jairo Arcila and been supported by her sons who founded the export business Cofinet.

This washed coffee was grown on Luz Helena’s farm Maracay in the Armenia area of Quindio, then taken to one of Cofinet’s processing stations.

Here, coffee cherry underwent 30 hours of underwater fermentation before being pulped. The parchment coffee was then washed and finally dried until ideal moisture content was achieved.
