We’ve been appreciating the variety that Colombia has to offer as a coffee origin at the moment, and we just couldn’t resist this one from ALL CAPS. With blackcurrant jam and red berry tea flavour, these coffee beans are tasting like some of our favourite Kenyan coffees, with a really vibrant body and a clean crisp finish that we think works perfectly for a black filter or batch brew.

Leonid Ramirez was born into a coffee growing family and began working in the industry while still at school after the death of his father. Always dreaming of owning his own farm, Leonid purchased Cortina de Hierro in Quindio in 2003 and the rest is history. His efforts to renew the land and invest in better farming practices gave him entry into the world of specialty coffee where he has continued to challenge his production by experimenting with fermentation techniques.

This lot underwent a carbonic maceration process before being washed, involving placing coffee cherries in airtight barrels and exposing them to a carbon dioxide-rich environment for fermentation. The CO2 helps break down the fruit pectins resulting in the winey flavours and vibrant aromatics that are displayed in this bold cup.
