We’ve been eyeing up these coffee beans from 17 Grams for a hot minute and the first smell of the box after opening was enough to let us know we were right to pull the trigger. This special lot has a vibrant and juicy tropical fruit profile at first sip, but cools to a more delicate white peach and orange blossom floral profile.

The Hernandez siblings have a big heritage of coffee innovation that they won’t simply fall back on. Together they operate Colombian coffee farm Finca Los Nogales with Oscar leading the way in sustainable farming and Angie bringing her background in microbial science to coffee cultivation and processing.

The results of their combined efforts are seriously complex and exciting lots like this natural/ mosto co-ferment, which undergoes a highly controlled thermal shock process then a 96 hour anaerobic fermentation with mosto cultures that are rich with microorganisms from previous fermentations.
