We loved Rafael Cambra's red Soplo- a firm favourite for its outstanding complexity at such great value. His white wine is much the same, delivering big apricot, spicy ginger and classic Mediterranean herbal flavour but wonderful balanced freshness too- not usual for Valencia grown grapes. This Spanish wine is a blend of 80% Malvasia and 20% Viura grown in clay limestone soils at 700MASL.

The grapes are hand harvested, the Viura a week earlier than the Malvasia, and gently machine pressed before being placed in steel fermentation tanks with wild yeasts. The temperature controlled fermentation lasts 16 days, with partial (20%) aging in French oak barrels before the wine is bottled with minimal sulphur and a gentle filtration for a straw yellow glass.
