We love a rare variety and experimental process, but sometimes really well done traditional processing and quality farming has an even bigger impact. This Colombian coffee certainly brings this impact to the cup with bold and vibrant flavours of black cherry, pineapple and raspberry.

This 100% Castillo lot roasted by Zennor has been sourced from smallholder farmers around the town of Acevedo, in the country’s Huila region. Castillo is renowned for being disease resistant, balanced and high yielding but it’s the carefully managed natural process that Qima Coffee use that’s making the difference here.

While its a traditional method, Qima’s meticulous processing sees ripe coffee cherries carefully sorted and then submerged in water for up to 72 hours for a controlled that brings out richness and complexity. After fermentation, the beans are pulped then dried on African beds until they reach ideal moisture content. A final mechanical drying step helps the coffee achieve perfect humidity levels for storage and export while still preserving the coffee’s characteristics.

Specialty coffee roasters and coffee shop ZENNOR have been operating in Glasgow’s East End for 3 years. Sophie and Kieran’s minimalistic space is home to a carefully curated selection of single-origin coffees, all ethically sourced for their clean flavour that lets intricate tasting notes shine through.
