Das Almas, Brazil - Scenery

Adriano Muñiz's is producing some of Brazil’s most unique lots at his farm Fazenda Das Almas in Sul de Minas. The Muniz family have owned the Fazenda since 1965, but since being taken over by Adriano and his sons they've innovated scientific post-harvest processing and invested in community and sustainability programmes. Despite being a highly productive 109 hectare estate, many of Das Almas’s lots are handpicked rather than mechanically harvested to really up the quality.

For this one ripe and overripe Rubi, a coffee hybrid variety bred more for dependability than complexity, were processed in their signature style. The cherries were placed in an air-tight tank with mosto (concentrated juice from previous fermentations) and molasses and allowed to anoxically ferment for 120 hours before being slowly dried on patio and mechanically. Scenery have roasted this one with a  light hand to show off this really process-driven coffee.

We’ve already brewed this one up on the Moccamaster and it was a hit all round, Kate says it’s grape push-pops and Beth says cherry cola, either way it’s got a big whack of funk and sweetness.

Scenery was founded by a trio of coffee professionals with a combined three decades of industry experience behind their new coffee shop and roastery.

One of the things we’re loving about Scenery is their unique approach to roast labelling. Rather than indicate roast by colour, their bags show how much roaster ‘influence’ you can taste on each coffee ie. how much they’ve pushed a coffee in a certain direction to encourage specific flavours.
