A Brazilian coffee with a bit of a difference. This lot from Mió adds a little bit of complexity in the form of clementine and floral parma violet to that familiar chocolatey Brazilian flavour profile.  This bag is part of Cairngorm Coffee’s endeavour to release some of their fave exceptional coffees at more accessible prices, bringing truly special lots to a wider audience.

Fazenda Mió spans almost 2000 hectares of land in Monte Santo de Minas, covering forward-thinking sustainable coffee cultivation, innovative processing facilities alongside native forest reserve and pasture areas. What gives this lot its unique character is the Carbonic Maceration technique they’ve used in post-harvest processing here. Coffee cherries are fermented in airtight barrels filled with CO2, in a technique borrowed from winemaking. This environment breaks down and ferments the pectins inside the fruit rather than the sugars of the mucilage, creating vibrant coffees with distinctive fruit flavour, creamy body and a clean finish.
