Bryan Smith, Colombia - Kobean Coffee Roasters
Kobean have picked another stunning experimental coffee with this one. These Colombian coffee beans come from third generation farmer Bryan Smith’s in the renowned coffee region of Huila. Bryan is keen to preserve the traditions of his family while also pushing the boundaries of coffee production through innovative processing, a focus on cultivating exotic varieties like Gesha and Pink Bourbon and connecting with likeminded coffee growers in Huila to build a passionate community.
This Pink Bourbon lot showcases the very best of this varietal, which gets its name from the unique pink colour of the ripe cherry, which has boomed in popularity thanks to its fruit forward sweetness and floral profile. Bryan elected to process this one with a special 30 hour washed process: coffee cherries harvested at peak ripeness were floated, sorted and then exposed to 30 hours of underwater fermentation before being pulped, washed and dried under temperature controlled conditions. This precise process brings out the inherent sweetness of the coffee while achieving a really clean final cup with plenty of floral aroma- brilliant for filter brewing.
